I'm a U.S. citizen, and I'm sponsoring my spouse for a green card. Do we need to attend an interview at a USCIS office?

Yes, both of you will typically need to attend an interview at a USCIS office as part of the green card application process

In some cases, USCIS may waive the interview requirement, especially if the application is deemed straightforward and there are no issues with the documentation

It also depends on how long you have been married and can convince them it's not a marriage of convenience. If not very long, but can show you've been together a number of years, they may only let you have a 3 year green card. You would then have to apply for a renewal before the old one expires.
