If you switch employers after your I-140 is approved but before filing I-485, will you lose your priority date?

You usually keep your priority date if the I-140 was approved.

The new employer will need to start a new PERM and I-140 process.

I don't think so. As long as your I-140 is still valid

If the old employer withdraws the I-140, you may still keep the priority date.
