I was laid off from my H-1B job, and I’m in my 60-day grace period. If I find another employer but they can’t file immediately, do I have any backup options to stay legally?

You can file a change of status (e.g., to B-2 or F-1) to buy more time.

Look for another H-1B sponsor willing to file quickly.

If you have a pending green card or I-140, check if AC21 portability applies.
