Does anyone else find themselves obsessively checking the USCIS tracker multiple times a day even though you know logically it probably won’t change, and if so how do you mentally deal with the anxiety and uncertainty that comes with waiting and not having any real control over the process?

Yes, a lot of people go through that and it’s honestly a very human reaction. When so much of your life depends on one update, your brain keeps checking for any sign of control even when you know it probably won’t change. What helps some people is reminding themselves that no amount of refreshing affects USCIS’s pace, and trying to redirect that nervous energy into something that actually distracts you, even if it’s just temporarily. The waiting is hard, and feeling anxious about it doesn’t mean you’re doing anything wrong.
